Blackwood Aged Goodradigbee Rum

Goodradigbee Rum is a classic Aussie rum. We use molasses as the base, and ferment it with one of two specific rum yeasts to give it a sweet but gentle flavour. We hate ‘back-of-the-throat’ burn at Goodradigbee, and we ensure our rum is as easy drinking as our whiskies.
Once fermented, our rum is double distilled for smoothness. From a 1000 litre wash, we end up with 80-100 litres of rum – a low extraction by industry standards, but we would argue, it is a better rum to start with. We run the stills slow – not too much heat, and let the distillation have time to capture the flavours – esters, oils etc.
Once distilled, we age the rum in Tasmanian Blackwood. This enhances the natural sweet caramel of the rum by adding chocolate and vanilla tones on the front of the palette. The end result is a refined local rum that pleases.
