For the barely, we wood-chipped one tonne of Ironbark firewood and sent the wood chips to Voyager Malts, the malting business.

They produced the smoked barley. It was a super smoky batch with a phenol count was above 100 which is very very high so we blended it with normal Ironbark Yellow whisky 50:50.

The union has produced a soft and mellow whisky with bite: think melon and toffee with the lingering smoke finish.

This is Batch No 1 - buyers will be purchasing one of 500 numbered bottles.

We use high-grade smoked barley in our wash. It produces a rich, smoky new-make spirit, enhanced by our Australian hardwood aging cubes.

Water

Water used for blending is filtered via a coconut and carbon filter.

Yeast

We use a specific-to-whisky yeast strain from DistillaMax.
